Hi y’all welcome back I wanted to start this weeks blog off with a new series I am calling notepad knowledge.. I have some gems located in my notes app that I have collected over the years from scriptures to motivational tactics to oranizational tips and blurbs from the books I’ve digested. Todays note pad knowledge is a list of 6 things that I have applied to every area of my life that is listed in this app probably from a novel that I enjoyed.

Just to pick up on that, I want to say love yourself enough to follow through with your dreams and your goals. Set a task out set a timer and get it done. Quit putting things off. Quit putting your life off. The thing life you want is one decision away. The thing in life you don’t want is one decision away. Look at every decision you have laid down in front of you at that moment and make the right one, worry about the rest later.

Skintini's Hot Honey Lemon Pepper Chicken

Hey Skintini Community!
I’m excited to share a recipe that’s been a huge hit in our household and has quickly become a staple. If you’re looking for a flavorful and easy meal, this Hot Honey Lemon Pepper Chicken is the way to go!
Ingredients:
• All-natural chicken breasts or thighs (bone-in)
• Oil and butter for the skillet
• Cajun seasoning
• Lemon pepper
• Salt
• Pepper
• Garlic salt
• Hot honey (optional for extra kick)
Instructions:
1. Prep the Chicken: Start by washing your chicken breasts or thighs thoroughly. Pat them dry with paper towels.
2. Seasoning: In a separate bowl, mix together Cajun seasoning, lemon pepper, salt, pepper, and a bit of garlic salt. This will be your dry rub.
3. Apply the Rub: Rub the dry rub mixture all over the chicken, making sure to massage it well into the meat for maximum flavor.
4. Heat the Skillet: Take your cast-iron skillet and lather it with oil and butter. Heat it up on the stove.
5. Cook the Chicken: Place the seasoned chicken in the hot skillet. Preheat your oven to 420°F. Once the oven is ready, transfer the skillet with the chicken into the oven and set the timer for 20 minutes.
6. Flip and Finish: After 20 minutes, flip the chicken breasts or thighs and cook for another 20 minutes.

I paired this dish with some roasted potatoes and barbecue baked beans, and it was a hit! Harley even asked for seconds, which is always a win. For a little extra zing, I added hot sauce to ranch dressing—so good!
